Prepare and Use
Beef Madras Cooking Instructions - Serves 2 2 tbsp oil 1 medium onion (approx. 140g) diced 70g - 1/4 jar of Paste 250g diced beef 200g canned chopped tomatoes 100ml water 1. In a medium saucepan, gently cool in oil with lid on for 10 minutes until golden. 2. Stir in paste, fry for 3 minutes. 3. Add beef and fry until sealed. 4. Add tomatoes and cook for 5 minutes to reduce. 5. Add water, mix well, cover, simmer gently for 40 minutes, until beef is cooked. Equally delicious with chicken, lamb, prawns or vegetables. Use as a marinade, either on its own or blended 50:50 with natural yogurt. Marinate meat then bake, grill or BBQ. Serves 4 Persons Ready in 15 Minutes Prawn & Coconut Jalfrezi Fry 1 tbsp desiccated coconut until light brown and set aside. Fry 2 sliced spring onions in oil for 2 mins then add 2 tbsp Patak's Jalfrezi Paste and fry for a further 2 mins. Add 1 chopped tomato, 1 sliced Red Pepper and a few spoons of water. Allow the tomatoes to break down then add 400g peeled prawns. Allow to cook for 5 mins or until the prawns are cooked through. Garnish with the coconut and some chopped coriander. Serves 4 Persons Ready in 8 hours Rogan Josh Lamb Shanks Place 4 browned Lamb Shanks and 2 sliced onions into a slow cooker with 1/2 a jar of Patak's Rogan Josh Paste, a 400g can of chopped tomatoes and 100ml of lamb or chicken stock. Cook on low for 8 hours. Add 150g cherry tomatoes 20mins before serving. Serves 4 Persons Ready in 30 Minutes Chilli Chicken Wings Trim 8 chicken wings. Mix 2 tbsp Greek yogurt with 3 tbsp Patak's Madras Paste; 1 tsp honey; 1 tbsp chopped coriander; 2 chopped spring onions and a 1 tsp chopped ginger. Coat the chicken wings and marinate for at least 2 hours. Cook in a pre-heated oven at 180°C for 25-30 mins, turning the chicken half way through. Serve with a squeeze of lime. Serves 4 persons Ready in 15 minutes Nine Gems Korma Heat 50g oil in a pan, cook 150g diced onion till golden brown. Add 100g Patak's Korma Paste, 100g chopped tomatoes & cook for 4-5 minutes. Add 400g assorted cooked vegetables, 100g diced paneer and 25g cashew nuts, cook for 1-2 minutes ensuring the vegetables are not overcooked. Add 50g pineapple chunks, 150g double cream, 5 green cardamoms and 15g chopped coriander. Bring to a quick boil and serve hot. Serves 4 persons Ready in 20 minutes Garlic Chicken Curry Fry 200g of diced onions in a pan for 3 mins. Add 2 tbsp of sliced garlic and fry for a further sliced garlic and fry for a further 2 mins. Add 3 tbsp Patak's Balti Paste and fry for 2 mins then add 250g diced chicken. When the chicken is sealed, add 200g chopped tomatoes, 100ml water and 50ml single cream. Cover and simmer for 10 mins. Serve.
