Prepare and Use

Cooking Guidelines Requires: 2 medium eggs; 100ml semi-skimmed milk; 50g softened unsalted butter; 2 x 7 inch sandwich cake tins. Electric or hand whisk. Oven Pre-heat the oven to 180°C/160°C fan assisted Gas Mark 4. Grease the cake tins with a small amount of oil or butter. Cover the bottom of each tin with some greaseproof paper or baking parchment. Into a large mixing bowl put the sponge mix, 2 medium eggs and 100ml semi skimmed milk and whisk until smooth. Put half of the mixture into each tin and spread it evenly over the surface. Bake in the centre of the oven for approximately 20 minutes until risen and golden. The sponge should bounce back when lightly touched. Remove from oven and leave to cool for 5 minutes before removing from the tin. Leave to cool completely. Into a small bowl add contents of the icing mix sachet (reserving 1/2 tsp to dust the top if desired) and 50g softened butter and mix until smooth. Spread over one of the cooled cakes. Spread the jam over the other cake and sandwich together. If desired dust the top with icing sugar. Cooking appliances vary. These instructions are given as a guide.
