Prepare and Use
1kg Carrot Cake Mix 100ml vegetable oil 450ml cold water 300g grated carrot 3.5kg Carrot Cake Mix 350ml vegetable oil 1575ml cold water 1050g grated carrot Step 1 Weigh out the required quantity of mix, cold water and vegetable oil into a bowl. Step 2 Using a beater attachment mix for 1 minute on slow speed. Scrape down the mix, and then mix for a further 4 minutes on a medium speed. Add the grated carrot and mix on slow speed for a further minute. Step 2 Pour the made up mixture into a greased tray lined with baking parchment (Do not use greaseproof paper.) Step 3 Bake at 180°C/350°F/Gas Mark 4/Fan Oven 160°C for approximately 25-30 minutes or until well risen and a skewer comes out clean from the centre of the cake. Remove from the tin and leave to cool on a wire rack, before decorating and portioning. All appliances vary, these are guidelines only. For fan assisted ovens cooking times should be reduced. Hints & Tips Top with a cream cheese icing for a classic carrot cake - simply blend together cream cheese and icing sugar. Try something different and replace the grated carrot with dried pineapple, mango or apple for an alternative fruit cake. Why not try adding some chopped walnuts to the cake batter and top with a cream cheese icing to make a rich Passion Cake.
