Prepare and Use

Recipe idea - Scotch Broth Ingredients: (Serves 8) 250g Jem soup mix 1 Large Onion, diced 1 Large Leek, sliced 3 Turnips, diced 1 Swede, diced 3 Carrots, sliced 1kg Neck of Mutton or Lamb 3.5lt Vegetable Stock 2 tbsp Fresh Parsley, chopped Salt & Black Pepper Method... 1. Soak the broth mix to the on pack instructions. 2 Add the onion, leek, turnips, swede, carrots, mutton or lamb & vegetable stock to a large saucepan over a high heat & bring to the boil. Skim off any fat from the surface of the broth with a slotted spoon. 3. Reduce the heat & simmer for 30 minutes, add the pre-soaked broth mix & simmer for 70 minutes, until the meat is tender & falls of the bones. Remove the bones & discard. 4. Add the parsley, season to taste & serve.
