How to cook
Cooking Instructions General
1. Preheat the oven to 190°C, 170°C fan assisted, Gas Mark 5. 2. Heat 1 tbsp of oil in a frying pan and fry the chicken and onions for 3-4 minutes turning occasionally. Place in an ovenproof casserole dish with the carrots and pepper. 3. Mix 4-6 heaped dessert spoons (43g) of seasoning mix with 425ml of cold water and add to the casserole. Cover and cook for 1 hour, stir half way through. Ensure chicken is thoroughly cooked before serving. 4. Serve with mashed potato. Ensure product is piping hot before serving. Serves 4.

Andreas and Alex have always had an appreciation for quality meats and especially locally grown products, but the incredible Ibérico charcuterie and fresh meat was only available to them if they imported this from Spain.

For this reason, the location was an important factor in creating the farm. It is set on a mountainous landscape with oak, walnut & holly trees at an altitude of 700 meters. Located on Mount Lapitha
in the Western Peloponnese near Ancient Olympia, it is a protected area and wildlife refuge. The pigs are left to freely forage in this rich natural environment.
Andreas and Alex follow the nagtural farming model. The pigs are fed exclusively with natural cereals and herbs, found in Greece. Once the pigs reach maturity, they are also fed nuts to enhance the flavour of the meat.

Recipe idea - Scotch Broth Ingredients: (Serves 8) 250g Jem soup mix 1 Large Onion, diced 1 Large Leek, sliced 3 Turnips, diced 1 Swede, diced 3 Carrots, sliced 1kg Neck of Mutton or Lamb 3.5lt Vegetable Stock 2 tbsp Fresh Parsley, chopped Salt & Black Pepper Method... 1. Soak the broth mix to the on pack instructions. 2 Add the onion, leek, turnips, swede, carrots, mutton or lamb & vegetable stock to a large saucepan over a high heat & bring to the boil. Skim off any fat from the surface of the broth with a slotted spoon. 3. Reduce the heat & simmer for 30 minutes, add the pre-soaked broth mix & simmer for 70 minutes, until the meat is tender & falls of the bones. Remove the bones & discard. 4. Add the parsley, season to taste & serve.
